Pineapple Lemon Pie

1/4 cup Cornstarch 
2 cups Pineapple juice 
1 cup Coconut milk
1/2 cup Sugar 
 2 Tbsp. Lemon juice
1/4 tsp. Salt

Add the cornstarch and pineapple juice till the cornstarch is all dissolved. 
Add remaining ingredients and bring to a boil while stirring constantly until thickened.   Poor into the baked crumble crust. (below) Let pie cool before eating... I usually top it with Country Life's Whipped Topping, but unfortunately I can't post it here, since it's copyrighted.    ENJOY!!!


Crust
1/2 cup Flour
2-3 Tbsp. Sugar
2 Tbsp. oil
1/8 tsp. Salt  

Preheat oven to 350. Put all ingredients straight in the pie dish. Mix well with a fork. Pat down well with your fingers. Bake at 350 for about 15 minutes.

Oatmeal Date Cookies

Dough:
1/2 cup Sugar
1/4 cup Water
1/2 cup Oil
2 cups Quick Oats
1 cup Flour
1 tsp. Salt

Filling:
1 cup Water
2 cups Dates

Mix first 6 ingredients together. Roll out dough 1/4 inch thick, and cut in circles with a cup. Bake at 350 untill lightly browned (about 15 minutes)   Blend date filling. Spread filling between two cookies to make a cookie sandwich. Best the next day. 
This is one of our family favorites, handed down through the family.  It is highly edited (made vegan) from one of our great-great aunts!   -ENJOY!  

Exceptional Popcorn Seasoning

4 cups Yeast flakes 
1 1/2 Tbsp. Onion powder
1 Tbsp. Garlic powder
3 Tbsp. Paprika
1 1/2 tsp. Ground celery seed
1 1/2 tsp. Turmeric
3 tsp. Dried parsley
3 Tbsp. Sugar
5 Tbsp. Salt

Blend all ingredients until fine.  Store in covered container. Sprinkle on popcorn as much or as little as desired.  Delightful!
This is by far our family's favorite popcorn seasoning. When our grandparents come over, both our grandma's get addicted to it and can't stop eating it! :) :)     -ENJOY!    

Garlic Bread

2 cups oil  
4 tsp. salt
6-7 cloves of garlic
1/2 tsp. butter flavor 
2 carrots (for color)

Preheat oven at 400. Blend all ingredients together till smooth, and brush on bread. Wrap in foil, or just lay plain on a pan and bake for 10 minutes, or until hot. Delicious!

Fabulous Granola

This is by far our favorite granola recipe of all times...

4 cups Cornflakes
4 cups Rice Krispies
4 cups Quick oats
4 cups Regular oats
1 cup Chopped pecans
1 cup Almond slivers
1 cup Chopped walnuts
1 cup Shredded coconut

Mix above ingredients well. In another bowl add:

1 cup Honey
1 cup Oil
2 tsp. Salt
4 Tbsp. Imitation vanilla

Mix both wet and dry ingredients together well, and bake at 190 over night. ENJOY!

Best Vegan Butter!

1 1/2 cups water
3 cups frozen corn
--------------------------
1/2 cup water
4 1/2 tsp. salt
1 can of Coconut milk, and 1 1/2 cups oil (or to make a total of 3 cups)*
1 tsp. butter flavoring
1 Tbsp. lecithin granules 
2 tsp. agar powder
18 ice cubes

Boil the first two ingredients while you prepare the rest of the ingredients. Blend the next four ingredients (water, salt, oil, and butter flavoring). When corn is done, add the corn and lecithin granules to the blended mixture separating the corn from the excess water. Add the agar powder to the excess water used in the corn. Excess water should amount to 1 cup (or add enough water to = 1 c) Boil the agar with the 1 c. liquid for about 1-2 minutes. While agar is boiling, blend mixture till its smooth. Add all the ice cubes quickly one at a time. Then poor in the boiled ager. Blend well. 
Put in refrigerator till firm. 
*If you don't have any coconut milk, don't worry - you can do all 3 cups oil, and it works fine as well. You may have to stop the blender for a few minutes once everything is added, because the oil seems to thicken it somewhat. So let the blender rest a few minutes till you can start blending again.     ***Best used in a Vita-Mix***
